Once I made Kimci with bok choy and it was as tasty as Kimchi made of cabbage. I find making bok choy Kimch much faster than making cabbage Kimchi as bok choys are much faster to marinate than cabbages. Making Bok Choy Kimchi is all the same as cabbage Kimchi excepting it takes a little less time for marinating. See recipe for cabbage Kimchi.
