Wedding Noodles( 잔치 국수)


My family expect noodles for lunch in weekends. I make this noodle soup when we want something very fresh and plain or when it is cold. It is called 'janchi-gooksu' in Korean, which means noodles eating at weddings. In the old days Korean people used to serve this noodle dish for the guests wishing the couple stick together for a long time just like noodles.

Ingredients
somen noodles (or any noodles not too thick, you can buy somen noodles at any Asian supermarket)
anchovy stock icecubes
garlic, spring onions

Instruction
Cook noodles as instruction and put aside. In a pot pour water in (two cups per person) and bring to boil. Once it boils add in anchovy stock icecubes( one cube per one cup) and boil again. In a bowl put some noodles and pour in the soup. Garnish with chopped Kimchi, baked seaweed crumbs, chopped chili.


Tips
- If you don't like anchovy stock you can put any stock you like.
- You can stir fry the Kimchi to give some oil flavour to it.
- You can add any vegetables stir-fired.
- Serve it immediately with soy sauce dip, salt.
