Soybean Paste Stew(된장찌게)


This stew is the most popular stew in Korea along with kimchi stew. Diced Tofu, potato and onions are cooked in soybean paste soup. Some chilies can be added for your liking.

serves 4

Ingredients
2 tbsp of soybean paste( at Korean shop)
tofu, potato, diced
zucchini, hot chili (optional)
5 anchovy stock icecubes

Instruction
Pour one and a half cups of water in a deep pot and bring to boil. Once it boils add in the soybean paste, tofu and diced vegetables and keep boiling. Once it boils cook the stew until the tofu tastes the paste(about 10 minutes). Add in chili, chili powder, spring onions for your preference. 

Tips
- Try not to break the tofu when stiring.
- How much soybean paste is needed is vary from brands you use.
