Cellophane Noodles(잡채)

 
It is called 'jarp-chae' in Korean, which means a mixture of stripes of vegetables, beef and egg. This noodle dish is famous for the mild flavour and the beautiful color in and outside Korea.

Ingredients
cellophane noodles(at Asian shop)
1 bunch of spinach
onions, carrots ( cut in stripes)
eggs
beef ( cut in stripes)
soy sauce, sugar, black pepper, sesame oil, roasted sesame seeds for seasoning

Instruction
Season beef with salt and pepper and sit for 5minutes. Cook the spinach(Recipe). Cook the noodles as instructed on the packet. Wash them under the cold water and drain and set aside. Stir fry the cut carrots, onions and the marinated beef stripes and set aside. In bowls seperate the egg white yolk and whisk. Pan fry seperately and cut in stripes after cooled down. Get all the ingredients in a big mixing bowl and mix them together and season to your taste.

Tips
- Cellophane noodles are also known as Chinese vermicelli, crystal noodles or glass noodles.
- I sometimes put some seasoned soybean sprouts and it tastes nice and crispy.
- You can try it with any noodles such as sphagetti, penne. Wouldn't recomend thin noodles such as somen, thin rice noodles, though as it is hard to keep the shape of the noodles while mixing.
